Head of branding & marketing.

During her LLB at Edinburgh she met Craig. 

They found they had a common love for wild camping & swimming in the glens of Scotland.

Often taking trips into the darkened highlands just to gaze at the stars. Iona loves the calming beauty of the Scottish wilds. 

Iona moved to Norway with Craig to work in a whisky distillery. Taking her away from the metropolitan world of law, she dove straight into the wilds of Norway. Learning how to distill, mash & harvest local botanics.

The experience in Norway and her love of Scotland quickly inspired her to create a product to bring the wilds of her homeland to those around the world.

Craig


Head distiller

Born and bred in Scotland.  He loves everything that the Scottish landscape has to offer. Particularly the stunning Munro hills.

 Whisky is part of Craigs family history so it was almost inevitable that he would enter the same industry as his great grandparents.

Craig was head distiller at a Norwegian whisky distillery at the young age of 24.  Here he helped create an award winning gin and a wild whisky yet to be released. 

His experience in Norway gave him a greater appreciation of the effect of using local ingredients and their unique ability to transport you into the wilds. 

Letter from the pomology team

We founded Pomology in 2022  after distilling in a Norwegian whisky distillery and seeing the positive affects that terroir can have on the flavours of your final product. 

 When wild camping in Scotland, surrounded by the stunning scenery we knew we had to share this experience with the world. 

Where better to set up our tent than in Perth or ‘the Shire’. Famous for having highland hills to west feeding into lakes and vast berry fields to the east.

 Terroir affects our products every year.  Each year our batches will be different due to the varied soil, topography and climate of ‘the Shire’ resulting in a truly wild Scottish flavour experience.

 From the local botanics available we have created our wild whisky, liqueurs and chocolates ranges, each of which will submerse you in the experience of being in the wilds of Scotland. Enjoy the wilds of Scotland 2023!
